Penny Hunking, Independent Registered Dietitian and Sports Nutritionist (Freelance)

Penny Hunking has written, researched and talked to consumers and professionals about virtually every aspect of diet, weight management and exercise.

Penny thrives on working with new and challenging projects with the aim of communicating clear nutrition messages. She works extensively with a range of clients providing them with innovative solutions to their corporate and national nutrition projects and is experienced in working as part of a team, delivering according to project guidelines and requirements.

A creative thinker with a strong background in programme development and execution, Penny is an accomplished writer, speaker and spokesperson.

Professor Bruce Griffin, University of Surrey (Academia)

Professor Griffin is a biomedical scientist with expertise in lipid metabolism, nutritional biochemistry and cardiovascular disease. After his BSc in medical laboratory science (1984), he gained his PhD on the effects of exercise & diet on human plasma lipoproteins at the University of Aberdeen(1988), and undertook postdoctoral researchin Pathological Biochemistry at Glasgow Royal Infirmary until 1994. Since then, he has held academic posts as a Lecturer, Senior lecturer, Reader and Professor of Nutritional Metabolism at the University of Surrey. He is a teacher of undergraduate dietitians, biochemists & medical students, and postgraduates in clinical biochemistry and nutritional medicine, and an active researcher in human nutrition in relation to cardiovascular health. He has published widely on the topics of lipids, dietary fat and cardiovascular risk, and has received grants for his research from the Medical Research Council, British Heart Foundation, Department for Environment Food and Rural Affairs, Food Standards Agency and Biotechnology and Biological Sciences Research Council.

Rhiannon Lambert, RHITRITION (Clinic)

Rhiannon Lambert is a Registered Nutritionist specialising in weight management, eating disorders and sports nutrition. Founder of leading Harley Street clinic Rhitrition, bestselling author of Re-Nourish: A Simple Way To Eat Well and Food For Thought podcast host, Rhiannon’s qualified approach to nutrition and total dedication to her clients’ needs has seen Rhiannon work with some of the world’s most influential people

Registered with the Association for Nutrition (RNutr), Rhiannon obtained a first-class Bachelor (BSc) degree in Nutrition and Health and a Master’s (MSc) degree in Obesity, Risks and Prevention. She is also a Master Practitioner in Eating Disorders and Obesity having obtained a diploma from The National Centre For Eating Disorders approved by The British Psychological Society (BPS).

Dr Louise Durrant, Yakult UK (Industry)

Louise Durrant (neé Wilson) is a Registered Dietitian with a PhD in Nutritional Sciences, now working within the food industry. She is passionate about evidence-based science communication and supporting the development of skills required for career and leadership progression within the nutrition field.
