Changes needed to hit free school meal targets, study reveals

Quality and size portions, rather than stigma, are the main reasons that pupils are not taking up their free school meals, according to new research by Leeds Metropolitan University, published this week in the journal Public Health Nutrition.

Nutrient mechanisms in inflammation, infection and immunity - Biochemical Society and British Society for Immunology

The interaction between nutrition and the immune system is well recognized. Nutrition is critical to immune defence and to pathogen resistance during infection. In addition, inflammation, an underlying component of numerous chronic diseases, is modifiable by diet. Several nutrients and diet-derived compounds modulate various components of the immune system and have beneficial effects in infectious and inflammatory diseases, including vitamins D and E, phytochemicals and lipids. Recently, novel mechanisms of action of nutrients on immune cells have been described.

Vanishing vitamins: how to keep them in your cooking - Dr Richard Hoffman

No-one wants vital nutrients to be lost when preparing food. But it often happens: for example potatoes must be cooked to make them digestible but this destroys some of their vitamin C. However, there is plenty we can do to prevent the loss of nutrients when cooking our food. We can even enhance the nutritional value of some foods by the way we prepare them.

This event is designed to update and improve the knowledge and skills of dietitians and nutritionists in recipe analysis. In particular it is designed to provide a learning opportunity for dietitians to understand how they can minimize known errors in nutrient analysis and therefore produce a legally acceptable analysis.
